Pitching is the process of altering the pitch of an audio file without changing the tempo (or anything else, for that matter) in order to make it sound like it is performed by one with a notable tone of voice, such as Darth Vader or Alvin and the Chipmunks.
This process is popular on YTMND in the form of the Vader Sings fad. The pitch of a song is lowered, making it sound like Darth Vader. Occasionally, sound effects such as Vader's deep breathing, or Nooo! are added.
